   If you’re in the mood for all-American food piled high in a retro dining atmosphere, stop by downtown Sioux Falls’ favorite corner restaurant. Recipe

Cajun Shrimp Jambalaya

Ingredients:
¼ lb Butter
1 lb Small diced andouille sausage 1 qt diced onions
3 cups diced ¼ Green Peppers
3 cups diced ¼ Celery
3 cups Chopped Tomatoes
¼ cup Vegetable Magic
1/8 cup Meat Magic
½ gallon Uncle Ben’s Converted
1 ¼ gallon Beef Stock

Wash hands. Thoroughly clean/sanitize food utensils, equipment and work surfaces. Heat a heavy brazing pan over medium heat. Add butter and bring to a sizzle. Add celery, peppers, and onions and cook for approximately 8 minutes. Add andouille sausage, vegetable magic and meat magic, stir together. Cook for 5 minutes at medium high heat. Add rice and sauté for approx. 15 minutes or until lightly browned. Lower temperature to medium heat and add chopped tomato and beef stock. Reduce heat and simmer for 20 minutes, covered with sheet pan. Remove cover and simmer for another 3 to 5 minutes to cook out excess moisture. Remove jambalaya on to a sheet pan. Evenly spread jambalaya to cool.
